Paddles

The paddle of a bread machine is perhaps the most important bit. The paddle has to mix and knead heavy dough, so it needs to be sturdy and attached to a powerful enough motor. You’ll also need to clean it at the end, so it’s best if it uses a non stick coating. 

Most paddles remain embedded in the loaf during baking, and are removed at the end. This does make a hole in the bottom of the bread. Some, however, have clever collapsible paddles, which means you don’t have to tear the bread. It is possible to remove the paddles from a machine without collapsible paddles — carefully take the risen loaf out, remove the paddle and put the loaf back in for baking. It’s a bit fiddly, but worth it if you want a pristine loaf. Personally, I don’t mind the hole at the bottom.
